Thayiru vada/Dahi vada

                   Thayiru vada/Dahi vada



             I searched so many recipes  for thayiru vada.And finalised this one without adding coconut(I think in south side coconut is using).Hope you all will try and let me know the result

Ingredients:


For uzhunnu vada:



  • Urad dal/uzhunnu:1cup(I used 200ml cup)
  • Cooked rice:1/4 cup
  • Fenugreek :1/4 tspoon
  • Onion:1 big
  • Ginger:small piece
  • Green chilly:3
  • Pepper:1/4 tspoon
  • curry leaves
  • coriander leaves
  • salt
  • oil

For tempering:



  • Curd:1 cup
  • Mustard/kaduku:1/4 tspn
  • Urad dal:1/4 spoon
  • Green chilly:1
  • Dry red chilly:2
  • Ginger chopped:1/4tspn

Method:


  • Soak urad dal and fenugreek for 2 hours
  • Drain and grind it in a grinder(if you are using mixer grinder try to add less amount of water.I used food processor )with cooked rice
  • Dont add salt while grinding 
  • Chop onion ginger greenchilly  curry leaves and coriander leaves add pepper too.Mix the vada batter to the chopped ingredients.Now you can add salt
  • It is important to check the consistency of the batter.if it is running you cant make good vada and if the batter is too thick the vada will not be soft.
  • Wet your palm and make small balls with the batter press it and make small hole with your thumb.(Each time you have to nwet your hand).First time you feel it as tough but by practice it will be easy.Or you can use plantain leaf(vazhayila)for shaping vada.
  • Drop it slowly to the hot oil
  • Fry the vadas till golden brown
  • Keep it aside in a bowl
  • Mix the curd with salt
  • Heat the kadai and add mustard to the oil when it splutters add urud dal ,dry chilly ,green chilly,chopped ginger and add this to curd
  • Now soak the vadas in hot water and squeez of all the the excess water.
  • Put the vadas in the curd mixture
  • Leave it for 1 hour
  • Thayir vada is ready
