        Egg dum  biriyani

                 My husband is a die hard fan of egg.And my kid Kannan is a true follower of his dad.So it is very easy to satisfy both of them even with a simple omelet.
But when i asked him suggetion for making egg biriyani as sunday special I didnt get much support.But when I served it,the response was unbelievable!The same comment and excitement I got from my friend too.You can take it with raita,pappad or with pickle

        Egg dum  biriyani


For rice:

  • Basmati rice:2 cup(I used 200ml cup)
  • Clove:4
  • Cinnamon:1 stick
  • Cardamom: 4
  • Onion sliced:1 tblspn
  • Lemon juice:1 tspn
  • Water:3 cup
  • Salt
  • Ghee
  • Oil

For masala:

  • Egg:8
  • Onion:3 big
  • Tomato:1 big
  • Ginger Garlic pste1 &1/2 tblspn
  • Green chilly:2
  • Chilly powder:1 tspn
  • Turmeric powder:1/4 tspn
  • Garam masala powder:1/2 tspn
  • Biriyani masala:1 tspn
  • Coriander leaves:1/2 cup
  • Mint leaves:1/2 cup
  • Curry leaves:1 spring
  • Salt
  • Oil

For garnishing:

  • Onion sliced and fried:1/2 cup
  • Cashew nuts fried:2 tblspn
  • Kismis fried:2 tblspn
  • Egg:4
  • Pepper powder
  • Salt
  • Oil


Preparation of rice:

  • Wash and soak basmati rice for 15 minutes.Drain it and keep aside
  • Heat the pressure cooker with oil and ghee.
  • Add cinnamon,clove,cardamom and sliced onion.Saute it well.
  • Add rice and stir it well.
  • Add water to it.
  • Add lemon juice and salt.Stir well.
  • Close the pressure cooker with lid and wait for one whistle.
  • Let it cool.

Preparation of masala:

  • Boil the egg and de shell it.
  • Marinate the egg with little turmeric powder,chlly powder and salt.Keep aside for 30 minutes.
  • Fry it in oil for few minutes.
  • Heat the pan with oil.
  • Add sliced onion.Saute it well until it turns golden brown colour.
  • Add tomato and saute it well.
  • Add ginger garlic paste.
  • Add garam masala powder and biriyani masala.
  • Add coriander leaves,mint leaves and curry leaves.Stir it well and mix all the ingredients together.
  • Add fried egg .
  • Add 1 tblspn water and mix well.

Layering of biriyani:

  • Heat the pan with oil .
  • Crack the eggs and add salt and pepper powder to it.Stir it well.Make scrambled egg  and keep aside.
  • Grease the biriyani pot or any other vessel with ghee.
  • Put one layer of masala in it.
  • On the top of it spread one layer of  rice.
  • Now spread fried onion,cashew and kismis.
  • Add scrambled egg.
  • Repeat the procedure untill the rice and masala finished.
  • Cover the vessel tightly and keep it in a thawa for 10 minutes in low flame.
  • Yummy egg biriyani is ready.

  • This measurement is enough for preparing 4 to 6 plates of biriyani.
  • You can replace biriyani masala with garam masala
